- What are they?
- A group of substances that share the following characteristics
- Contain carbon, hyrdrogen and oxygen
- Proportion of O to C is smaller than in carbohydrates
- They are insoluable in water
- Soluable in organic solvents such as alcohhol and acetone
- Roles of lipids
- Main role in plasma membranes
- As an energy source
- When oxidised, lipids provide more than twice the energy as the same mass of carbohydrates
- Waterproofing
- Insoluable in water
- Insulation
- Fats are slow conductors of heat and when stored beneath the body surface help to retain body heat
- Protection
- Fat stored around delicate organs
- Phospholipids
- Similar to lipids except one fatty acid molecule is replaced by phosphate
- Fatty acid molecules are hydrophobic
- Phosphate molecules are hydrophillic
- Hyrophilic head
- Interacts with water
- Hydrophobic tail
- Mixes readily with fat, but orientates itself away from water
- Said to be polar
- Triglycerides
- Made of 3 fatty acids and glycerol
- No double bonds - saturated
- One double bond - unsaturated
- More than one double bond - polyunsaturated
