Micro-organisms Cells present everywhere only visible under a microscope. They cause food to go off and food poisoning. Three main types that cause illness; bacteria, yeast and moulds.
Pathogenic Bacteria Food poisoning.
Radiation E.g. A grill. Heat energy is radiated in straight lines from the source to the food.
Conduction E.g.. Hob through a pan/ Oven through a tin. Heat energy passed from molecule to molecule through the food.
Convection E.g. Hob through water/ Oven through air. A convection current circulates heat in liquids and gasses.
Proteins Needed for growth and repair of the body.
Carbohydrates Provide the body with energy and fibre.
Fats Needed for warmth, energy and protection.
Vitamins They do a variety of jobs in our body. E.g. Calcium is needed for the development of strong, healthy bones and teeth.
Malnutrition Incorrect of unbalanced intake of nutrients.
Deficiency Disease A disease caused by a lack of nutrients. Happens more often in poor, under-developed countries.
Diet The food and drink we consume.
Balanced Diet A variety of different nutrients.
Eatwell Plate Shows how much of what we eat comes from each food group.
Healthy Eating Guidelines Eat less fat, eat less salt, eat less sugar, eat more fibre.
Diabetes Develops when the body can't use glucose properly. It is high blood sugar.
Type 1 diabetes Insulin dependent diabetes usually seen in younger people.
Type 2 diabetes Usually non-insulin dependent tending to affect adults over 40 and overweight people.
Coeliac disease Intolerant to the protein gluten found in wheat, barley and rye.
Lactose intolerant Can't digest milk sugar, lactose. Cow's milk must be avoided but cheese yogurt and soya milk can be eaten.
Vegetarians Don't eat meat or fish and get their protein from dairy products, nuts and pulses. There are several types of vegetarians.
Lacto Vegetarian Doesn't eat meat, fish, poultry or eggs.
Lacto ovo Vegetarian Doesn't at meat fish or poultry.
Vegan Doesn't eat any animal products; milk, cheese, eggs, etc.
Poultry Domestic fowl, such as chickens, turkeys, ducks, and geese.
Standard components A pre-prepared ingredient used in the production of a food product. E.g. Pizza bases and ready made sauces.
Fairtrade The producer receives a guaranteed and fair price for their product regardless of the price on the world market. This means their quality of life is should improve as well as the long term prospects for their children.
Gelatinisation When mixed with a liquid and heated, starch grains swell and burst and absorb moisture, resulting in the thickening of a liquid.
