Brûlée ‘Burned’, e.g. crème brûlée or burned cream

Reduce To concentrate a liquid by boiling or simmering.
Roux A mixture of fat and flour used as a basis for sauce
Sauté To toss in hot fat, e.g. sauté potatoes
