Mummification was a process that the Egyptians used as part of there religious beliefs. When a person died, certain organs were removed from the body and placed in jars. This led to the Egyptians having an increased idea about anatomy but as only certain organs were removed, and only after the person had died, they didn't have any knowledge of how the organs worked together to make the body work.
