COCHINILLO ASADO (ROAST SUCKLING PIG)The cochinillo asado is cooked and served all over Spain, but is very famous in Segovia. It is a roast baby pig. Its fatty outside is crisp and perfect for those who like pork rind, while its meat is tender and juicy.PULPO A LA GALLEGA (GALICIAN OCTOPUS)Pulpo a la gallega is Galician's signature dish. The octopus is boiled and the garnished with paprika, rock salt and olive oil. Sometimes it is also served with boiled potatoes.PAELLA (SPANISH RICE DISH) Paella is a saffron rice dish combined with seafish and meat or vegetables. You can eat Paella in Valencia, particularly in the village of El Palmar, where it is said that paella was invented.TORTILLA ESPAÑOLA (SPANISH OMELET)It is a typical Spanish dish consisting of a thick egg omelette made with potatoes fried in olive oil   and usually onions.
