Gustatory receptors are located in taste buds and surface of taste papillae
Each taste corresponds to a specific type of taste receptor which sets off a G protein reaction, causing the neuron to depolarise and fire action potentials
Sweet Tastes correspond to specialised receptor proteins which bind to sugar
Salty tastes detect concentration of sodium ions
Sour tastes detect concentration of hydrogen ions
Bitter tastes have specialised receptor proteins which bind to a variety of substances
Savoury tastes (umami) respond to amino acids (glutamate)
Information about taste is transmitted from taste receptors to the thalamus and gustatory cortex in the insula
