In condensation between two sugars, an OH NH2 NH4 H2O( OH, NH2, NH4, H2O ) group and H N F C( H, N, F, C ) group leave their monomers and become water carbon dioxide ammonia hydrogen gas( water, carbon dioxide, ammonia, hydrogen gas ). The monomers then join, forming a C-O-C C-O-H C-N-C O=N=O( C-O-C, C-O-H, C-N-C, O=N=O ) bond. This is called a glycosidic glycolic amide condensation( glycosidic, glycolic, amide, condensation ) bond. The resulting molecule can vary, for example:

While amylose glycogen cellulose triglycerides( amylose, glycogen, cellulose, triglycerides ) and amylopectin disaccharides insulin cellulose( amylopectin, disaccharides, insulin, cellulose ) both have 1,4-glycosidic bonds 1,3-glycosidic bonds 1,4-peptide bonds( 1,4-glycosidic bonds, 1,3-glycosidic bonds, 1,4-peptide bonds ), amylose glycogen cellulose triglycerides( amylose, glycogen, cellulose, triglycerides ) coils into a helical shape, but amylopectin disaccharide insulin cellulose( amylopectin, disaccharide, insulin, cellulose ) is branched out.
Starch is insoluble soluble inert liquid( insoluble, soluble, inert, liquid ) so as to not affect the water potential of the cells it's stored in.

Glycogen Cellulose Glucose Glucagon( Glycogen, Cellulose, Glucose, Glucagon ) is the main type of carbohydrate store in animals. It's a multi-branched unbranched granular insoluble( multi-branched, unbranched, granular, insoluble ) a-Glucose B-Glucose Maltose( a-Glucose, B-Glucose, Maltose ) polymer with 1,4- and 1,6-glycosidic bonds. It's highly compact coiled( compact, coiled ) so optimal for storage.
