  • Sift the flour and salt in a bowl, make a well in the centre
  • Break in the egg and add a quarter of the milk. Beat well.
  • Gradually add the rest of the milk and incorporate the flour to make a smooth batter.
  • Pour the batter into a jug and leave aside for 30 minutes
  • Put a little bit of oil or butter in a crepe or frying pan
  • When the pan is hot, pour a thin layer of batter in and swirl around to cover the bottom of the pan
  • Fry until golden brown/ bubbly on top
  • Turn carefully with a spatula
  • Try to flip dramatically in the air
  • Fry until the other side is also brown
  • Clean up the mess and try again !
  • Serve with Lemon and Sugar, maple syrup, or savoury fillings.
