  1. Definicion:
    1. Es la gelificacion controlada de un liquido que sumergido en un baño de calcio formara esferas.
    2. Elementos:
      1. Alginato + Lactato de calcio= Esferas
      2. Clasificacion:
        1. Basica:
          1. Permite crear caviar o ravioles, con su interior liquido que explota en la boca de quien lo come
          2. Invertida:
            1. Si el liquido que se desea esferificar contien calcio, en este caso se sumerge en alginato. Esta tecnica permite crear esferas de diferente tamaño o caviar falso.
