COCHINILLO ASADO (ROAST SUCKLING PIG)The cochinillo asado is cooked and served all over Spain, but is very famous in Segovia. It is a roast baby pig. Its fatty outside is crisp and perfect for those who like pork rind, while its meat is tender and juicy.PULPO A LA GALLEGA (GALICIAN OCTOPUS)Pulpo a la gallega is Galician's signature dish. The octopus is boiled and the garnished with paprika, rock salt and olive oil.
