Lipids, Triglycerides and Phosphlipids
- LIPIDS
- Made up of Carbon, Hydrogen and Oxygen but in much more
higher proportions of hydrogen than carbohydrates.
- The most common lipid is triglyceride
- At room temperature, fats are soild and oils are
liquid.
- TRIGLYCERIDES
- 3 fatty acids chains are attached to a glycerol
- Fatty acids are acids because
they contain the -COOH which is a
carboxyl group.
- A glycerol molecule has 3 carbons in which the -OH
of the triglyceride attaches to the -H of the glyercol,
this reaction is a condensation reaction because it
makes 3 waters.
- The bond between the fatty acid chain and the
glycerole molecule is called an ester linkage
- Insoluble in water because they are
hydrophobic, their charge isn't attracted to
water
- SATURATED/UNSATURATED
- Fatty acids are saturated because they have one single carbon bond
- These are solid at room temperature.
- If one or more bonds between the carbon atoms have
double bonds, then it is said to be unsaturated
- Usually liquid at room temperature.
