Food pests Animals or insects which contaminate or damage food.
Helpful bacteria Bacteria which help digest the food we eat, make foods such as cheese and yoghurt, develop new foods and treat sewage to make it safe.
High-risk foods Foods which bacteria are most likely to grow on.
Cross contamination Passing bacteria from one item to another indirectly (e.g. passing salmonella from raw meat to a piece of fruit on a knife used to cut both).

Low Risk Foods are.. Bacteria are not able to multiply in dry food or food containing high concentrations of sugar, salt, acid (vinegar - pickled) and other preservatives.

Salmonella Sources:- raw eggs, raw poultry, rodents, flies, sewage.
Salmonella Typical symptoms: Abdominal pain, diarrhoea, vomiting and fever.
Staphylococcus Aureus Sources: Human nose, mouth, skin, boils and cuts. Raw milk from cows or goats. Coughing, sneezing, spitting and spots
Clostridium Botulinum Sources: Soil and root vegetables.
