Water enters through the rocks cracks, freezes expanding the rock and breaking small bit and pieces.

When the heat the during the day causes the rock to expand, and the clod of the night causes it to reduce in volume, causing to slowly peel off like an onion.

Oxygen reacts with metals in rocks to form rust, especially Iron.
