  • Usage
  • No cereal mash required due to the sweet potato's low gelatinization temperature.
  • 5 lbs of sweet potatoes will yield roughly the same amount of extract weight as 1 lb of malted barley.
  • However, to achieve best results, they should still be prepared prior to their addition to the mash, based on what effect you want them to have on your finished beer.
  • Using 5 lbs of sweet potatoes for                                     a 5 gallon batch will not impede lautering, as sweet potatoes are low in protein. However, using more than 5 lbs per 5 gallon batch could create problems.
  • Consider adding 1/2 teaspoon of yeast nutrients during the last 15 minutes of the wort boil to ensure that the yeast are able to do their job effectively during fermentation.
  • It is recommended that you do not use sweet potatoes alone in your mash, as they are low in protein and need the enzymes in malt to ensure that they degrade properly and do not form a sticky mash. 
  • Chop your sweet potatoes & bake them in foil for 3 hours at 350 F (or until well caramelized)
