The Big Ideas: 1. Healthy Fatty Acid deficiency is epidemic (leads to musculoskeletal issues, endocrine issues, cardiovascular issues, immune issues, Allergies,skin problems, Depression) 2.Inflammation can be effectively managed with nutritional therapy, therefore reducing healing time.
Lipids and fatty acids Lipids- specifically made up of triglycerides (3 fatty acids and 1 glycerol) Fatty acids- are organic molecules made up of a chain of 1- 24 carbon atoms
Degrees of saturation (fat classifications) 1. Saturated-highly stable, do not go rancid easily, solid or semi at room temp, non essential,found in animal and tropical fats. 2. Monosaturated - relatively stable, low rancid level, liquid at room temp,non essential,found in olive oil and oils from nuts. 3. Polyunsaturated- releatively unstable, ranify easily, always liquid, ARE 2 esstenial EFAs- linoleic (omega 6) and Alpha-linolenic(omega 3), never use in cooking, found in flax, nuts, fish oil and seeds.
Roles of Fat in the body: 1. Makes food taste better 2.provides a source of energy 3.acting as building blocks for cell membranes and hormones 4.Aiding the absorption of the fat soluable vitamins A, D, E,and K 5.allowing for proper use of proteins 6.serving as a protective lining for the organs of the body. Helping regulate energy absorption by slowing the absorption of food 7.Increasing satiety
Prostaglandins they are like substances that the body needs formed from elongated forms of EFA's- Functions : regulation of cells communication system, like opening and closing channels , Provide fine tuning in keeping the body in homeostasis, increased blood flow in kidneys,dilating bronchial tubes, controlling anti-inflammatory
Cofactors in prostaglandin production 1.Proper digestion 2.Proper liver function 3. Enzymes- amino acids, vitamin B6,magnesuim and zinc
