Resource summary
Protein
Denaturation and Coagulation
Denaturation
Chemical bonds that holds the protein bundle together are broken
The molecule unfolds and changes shape
Chemical method
Acids can alter the PH causing denaturation
Lemon curds milk to make paneer
Mechanical
Air can be whipped in
Whisking egg whites to make meringues
Heat
The heat breaks the bonds
frying meat
Coagulation
The hardening or setting of a protein
The denatured proteins unfold and join up with other proteins
They trap water and air
Overcooking causes the coagulated protein to tighten up too much and squeeze out waater
frying an egg
What is it
Amino Acids
Protein is made up of a string of amino acids
There are 20 essential amino acid and not all of them are made in the body
When we digest protein our body breaks it back into amino acids can we can use it again
It's a macronutrient that is essential to all animals
Macronutrient means it's very big and our body needs a lot of it
It is in big bundles
Food sources
Plant
Protein complementation
a mixture of protein with different amino acids to make all the amino acids
Rice and bean salad
Beans on toast
Lentil soup
Vegetarian tortilla wraps
Nut butter on bread
Rice dessert with Gelatin
Protein Alternatives
Quinoa
Soy products
They have a HBV
Low fat content
little flavour
They are alternative to meat or fish
Tofu
Tempeh
Mycoprotein eg. quorn
A lot of the plant sources of Protein have a Low Biological Value
It doesn't have all the essential Amino Acids
seeds and nuts
beans and lentils
cereals
Gelatin
Animal
Beef
Lamb
Chicken
Pork
Proteins found in animals have High Biological Values
They contain all the essential amino acids
Fish
Eggs
Why do we need it
Protein deficiency
The body won't grow properly
The body doesn't get the proper quantities of nutrients
some loss of hair
Hair is made from protiens
easily develop infections
protein makes antibodies
Weakens immune system
May not be able to digest food properly
Various nutrients may not be able to be absorbed
Protein makes enzymes
too much protein can damage your liver and kidneys
Functions of Protein
To make the body grow
To repair the body
Helps to replace dead cells
To give the body energy
Used to make hormones
Helps you grow and reproduce
To make enzymes
Helps you break up and digest your food
To create ant-bodies
helps your immune system fight infections from virus and bacteria
