Unlike the mental model, the conceptual model is that actual, interactive model a user will be in some form of contact with. When creating a conceptual model, try to create something as close to an audience's mental model. However, if you are creating something that possibly might not be familiar with an audience's mental model, create some form of simple and effective training to change your audience's mental model to use your conceptual model.
