Made up of Carbon, Hydrogen and Oxygen but in much more
higher proportions of hydrogen than carbohydrates.
The most common lipid is triglyceride
At room temperature, fats are soild and oils are
liquid.
TRIGLYCERIDES
3 fatty acids chains are attached to a glycerol
Fatty acids are acids because
they contain the -COOH which is a
carboxyl group.
A glycerol molecule has 3 carbons in which the -OH
of the triglyceride attaches to the -H of the glyercol,
this reaction is a condensation reaction because it
makes 3 waters.
The bond between the fatty acid chain and the
glycerole molecule is called an ester linkage
Insoluble in water because they are
hydrophobic, their charge isn't attracted to
water
SATURATED/UNSATURATED
Fatty acids are saturated because they have one single carbon bond
These are solid at room temperature.
If one or more bonds between the carbon atoms have
double bonds, then it is said to be unsaturated
