- INGREDIENTS125g/4ozPlain FlourPinch of Salt1 Egg300ml/½pt MilkOil or butter for frying
- Sift the flour and salt in a bowl, make a well in the centre
- Break in the egg and add a quarter of the milk. Beat well.
- Gradually add the rest of the milk and incorporate the flour to make a smooth batter.
- Pour the batter into a jug and leave aside for 30 minutes
- Put a little bit of oil or butter in a crepe or frying pan
- When the pan is hot, pour a thin layer of batter in and swirl around to cover the bottom of the pan
- Fry until golden brown/ bubbly on top
- Turn carefully with a spatula
- Try to flip dramatically in the air
- Fry until the other side is also brown
- Clean up the mess and try again !
- Serve with Lemon and Sugar, maple syrup, or savoury fillings.
